Duck Preparation

Duck preparation is really quite simple; but, here are a few pointers we think may help. Properly prepared duckling breast is cooked to just pink. When cooked, the internal temperature should register between 150 degrees F (Gourmet Temperature) and 165 degrees F (USDA) for well done. Before slicing, allow duckling breast to rest three (3) to four (4) minutes. This allows the meat temperature to equalize, preventing excess moisture loss when cut. Frozen duckling should be thawed in the refrigerator overnight.

Step 1: Preparation
Quarter three (3) ducks; or, you may order pre-cut.
Step 2: Parboil Duck
Fill large pot with water.

Add Salt to taste and cut-up duckling.

Bring to a boil and cook for 45 minutes to 1 hour.
Step 3: Marinate
Drain water well.

Mix the following in a large bowl:

  • 1 cup of brown sugar

  • 6 oz frozen orange juice concentrate

  • 8 cups Culver Barbecue Sauce

  • Liquid Smoke is optional


Add barbecue marinade to hot duck. Mix thoroughly.
Step 4: Marinating Options
Marinate for at least 1 hour. You want to use all of the marinade, thoroughly saturating the duck.

If you wish to freeze or refrigerate for later use, you may do so.
Step 5: Grilling BBQ Duck
Heat coals, and place duckling onto the grill. Place breasts, skin-side down.

Grill until the skin is crisp, moving away from the fire if you wish to keep from burning.

Brush often with marinade.
George Foreman Grill
Step 1: Preparation
Place duckling skin side down, onto George Foreman Grill. Cook for 25 minutes with the lid up.

Turn, and cook for 1 to 2 minutes on the meat side with the lid down. Serve.
Griddle Seared
Step 1: Preparation
Before placing the duckling on the griddle, elevate the back legs of the griddle to allow any renderings to drain off during cooking.
Step 2: Cooking
Place duckling skin side down, onto Griddle. Set temperature to 400 degrees F. Cook for 30 minutes.

Turn, and cook for 1 to 2 minutes on the meat side. Serve.
Grilling Duck Breast
Step 1: Preparation
Prepare coals.

Season duckling breasts and place skin side down on the grill.
Step 2: Cooking
You will soon have a large fire. This is what you want. Do not extinguish it.

When the fire goes out, the duck is done.
Step 3: Flip Over
Turn over the breasts and cook for 30 seconds for rare, and 45-60 seconds for medium well.
Step 4: Slicing
Duckling sliced properly will be wonderfully tender. Cut the breasts in half. Then, slice at a 45 degree angle as shown.
Oven Baking Whole Duckling

Preheat Oven to 350 degrees F.

Add salt, pepper, poultry seasoning, or Culver's BBQ Rub to skin.

Bake uncovered for 2 to 2 1/2 hours on a rack, with a large pan underneath to catch the oil, to an internal temperature of 165 degrees F. Cook time may vary.

If you want to add a sweet glaze to the skin, add it 15 minutes before cooking is completed.
Pan Searing
Step 1: Placing Duck into Skillet
When you want to pan sear duckling breast, you first place the duckling breast, skin-side down into the skillet.
Step 2: Heat
Turn burner on to medium high and cook for 12 to 14 minutes. Cook time may vary.
Step 3: Drain
As the duckling breast cooks, drain off excess fat as desired. You may do this more than once until the skin is crisp and rendering stops.
Step 4: Turn and Cook
At this stage in the process, you have two choices. You may finish the cooking by turning the duckling breast over and continuing to cook it in the skillet. If you choose this method, cook for 45 seconds if you desire your duckling medium; and, 60 seconds if you want it well done.
Step 5: Finish on Grill
After you have cooked the duckling breast skin-side down, you can also choose to complete the cooking on the grill. If you choose this method, grill for one minute on each side, or as desired.
