Bacon Duck Breast Fillets
Pan sear the marinated duck breast fillets on high heat, skin side down for 10-12 minutes. Pour off renderings as breasts cook.
Turn over when skin side is brown.
Continue cooking on medium-low heat until done to your liking (approximately 2 minutes). Duck breast is best when still pink.
Scrambled Eggs
Break eggs into large bowl and beat on high until thoroughly mixed. Add 1 tablespoon of water if desired. Melt butter in large skillet on low heat. Pour eggs into skillet and cook until done, folding into the center as the egg cooks. Set aside to prevent browning. Sprinkle with fresh parsley.
