1 cup chopped parsley
2 Tbsp minced garlic
2 Tbsp minced lemon zest
4 tsp dried thyme
2 tsp fresh rosemary
2 Culver Duck duck breasts split and skinned
2 Tbsp extra virgin olive oil
Combine parsley, garlic, lemon zest, pepper, thyme and rosemary in a bowl.
Roll duck pieces in herb mixture to coat all over.
Put oil in large saute pan and turn heat to medium high.
When the oil shimmers add the duck and reduce heat to medium.
Cook, turning once or twice until the coating browns and the duck is medium-rare to medium (about 10 minutes).
Season with salt and let rest for a few minutes and enjoy!
